Sunday Smoothies ~ Butternut Squash Smoothie

Welcome First Day of 2017!

Here is a sunny first day of the year smoothie for you.

I tend to not make many smoothies in the Winter months
as they can be too cold and my body wants hot soup to begin my day,
yes, hot soup for breakfast!

But if all of the ingredients
are at room temperature to start with,
this can be a delicious way to start your day
or as a pick-you-up in the afternoon.

Butternut Squash Smoothie

Ingredients:
Please use organic!

  • 1/3 cup butternut squash puree

  • 1 teaspoon of ground cinnamon

  • 1 inch knob of fresh ginger (or half a teaspoon of ground ginger)

  • 1/4 teaspoon of ground nutmeg

  • 1 heaping tablespoon of cashew or almond butter

  • 1.5 cups of coconut water (or almond or coconut milk. If using coconut water I add 1/4 cup of coconut milk to make it extra creamy)

  • 1 scoop of grass fed collagen powder (or protein powder of choice)

  • Optional: 6-10 drops of stevia or 2 pitted dates

  • Nutmeg or cinnamon to sprinkle on top

  • 1 wish

Directions

  1. Place all room temperature ingredients in the blender and blend until smooth.

  2. Don't forget the wish!

  3. Top with a sprinkle of nutmeg or cinnamon

  4. Enjoy!
