Strawberry Mousse

I am back from my travels...
and I'm on a quest for new recipes to continue my healthy eating
as well as delight and inspire my love of delicious food!

The following recipe came to me
via a newsletter that I get from Izabella Wentz, Pharm.D., FASCP
(I added the stevia portion)

It is super easy to make
and incredibly delicious!


  • 1 cup of strawberries
  • 1/4 cup coconut sugar or maple syrup or 1/2 tsp stevia
  • 1 cup of coconut milk (thick preferred)
  • 8 fresh mint leaves


Blend strawberries, sweetener, coconut milk and mint leaves.
Place in the fridge and then serve cold.
