Sunshine In a Bottle Lemon Smoothie

It is pouring rain here.
We so need this precious water, but it is hard to remember
that blue skies and warmer days
are just around the corner...

This recipe is from Lori's blog called "foxes love lemons."
It is the perfect thing for a grey Winter's day
while dreaming of summer...

I tweaked the ingredients for this smoothie a bit.

Sunshine In a Glass Smoothie
Makes 2 Servings

Please use organic!

  • 1 cup full fat Greek yogurt* (substitute with coconut plain yogurt for a dairy free and vegan spin on this recipe)

  • 1 cup ice cubes- for a warm day (or filtered water for a cold day)

  • 2 teaspoons grated lemon zest

  • 2 tablespoons fresh lemon juice

  • 10 to 16 drops of liquid stevia (this replaces the 2 tablespoons of honey from the original recipe)

  • 1 tablespoon grated fresh ginger**

  • 1/2 tsp grated fresh turmeric** (1/8 teaspoon ground turmeric)


  • Blend all ingredients
  • Top with a pinch of powdered turmeric and/or bee pollen when done.
  • Enjoy!


* The original recipe called for low-fat honey vanilla yogurt. I find the flavored yogurts too sweet for my taste and current research is showing that fat-free and low-fat yogurt is not good for us! I also like the tang that the Greek yogurt adds to this recipe.

** I keep one-inch pieces of ginger and turmeric in my freezer so I always have them fresh on hand for smoothies and grating into other recipes.
